Just to share if another newbie such as myself comes across this thread Oregon fish and wildlife is a really good resource for actual pics of each rockfish. I don't think it's all the species but Probly the most common. Here is a link:

I agree.
Shoprat's fish is a gopher.
& Scott's fish looks like a copper.

IMO Gophers are among the hardest to clean - scaling or filleting
Blacks IMO beat Verms and Gophers for taste. I get a bit of Iodine flavor in some Gophers. All that Kelp they and their prey hang out in.
