Instructions for SOT self rescue generally say to remount behind the seat.  However, my seat back sticks up about 8 inches above the deck and is held in place by snaps to the pad eyes.  This would make it difficult to climb over into the seat.  In this situation would it be better to remount in front of the seat?

Who told you to renter behind the seat? In touring kayaks you do that, it's called a back deck scramble or cowboy scramble. In a SOT kayak it's easier to enter in front of the seat or at the seat. Unless its a Pro Angler then up the back it is.

I don't know any official safety procedures but I have no problem just hopping back in my seat from the side. What's wrong with that?

yeah the "behind the seat" instructions are for sit-in touring rescues where you have to sort of twist into the kayak cockpit. On most SOT kayaks like we generally paddle, just get your torso up on the deck, then swing your legs over. Or go practice and make up your own re-entry. Whatever you are most comfortable with is the best recovery.
