Southern Style Batter

Having lived a good part of my life in the South, I have an affinity for Southern Living.  Jan for Christmas gave me a book from the the people who put out Garden & Guns (a cool Esquire meets, Sunset, meets SouthernOutdoor Sportsmen Magazine).  It is a collection of various articles about southern life, and one article was making perfect fish batter:  Well last night I tried it on some cod fillets, and it came out damn fine!  I know it is not a West Coast Panko Creation (I like that too), but it reminded me of being back down in Florida for a little while.

Simple as all get out:

1 cup Flour
1 cup Cold Club Soda or Cold Beer (I tried it with Club soda and it worked great)
2 teaspoons of baking powder
Pinch of salt

Mix the dry stuff together, add the wet stuff till you get a nice batter.   dip your fish in, and fry until  until it comes out a nice crispy golden brown!
