Hello NCKA!
Let me start off by saying I'm new to kayaking but not new to fishing

Welcome.

I would recommend an into to kayaking class from a shop near you, I think there's a good one right in Lodi. It will help you learn paddling safety and put you far ahead on the learning curve.
The fishing part of it is a small fraction of the experience.
Also, demo, demo, demo, if you are able. Try at least 3-4 boats and find the one that suits you & your style. You can also just go with whatever you have (like a used boat) but if you get really into it, you'll end up with a few boats later on.
