For hunting I would want a covering so the boat color would not matter in the least. Out on the ocean if I want to avoid getting run over near a harbor entrance or want to be quickly found by a rescue boat I would want a high visibility yellow. I look at it as a might help and can't hurt choice.

With a paddle kayak the yellow blades moving across the horizon make the boats highly visible, but with a pedal boat the color of the boat becomes more important.

Usually with wildlife it is the outline of an animal that spooks them. Having your outline masked by a blind, a boat, or even a car will make all the difference in the world.
