I saw a really interesting (and disturbingly sad) TV program about this about a month ago.

One of the possible solutions they are working on is "teaching" the native sharks that lionfish make a tasty snack.

The Florida Wldlife Commission puts out fliers every year about how to clean and prepare them.  There are also quite a few tournaments where they are the target species.  However they have become quite common from the Florida Keys all the way up to Jacksonville already!
