Maybe a bit late, but when are you going?  I just moved here from Jacksonville Florida and fished around that area quite bit.  Plenty of inshore saltwater fishing to be had.  The place is loaded with redfish, flounder, and speckled trout.  Plenty of bycatch as well such as bluefish, jack crevelle, ladyfish, small sharks, rays, etc.  The kayak fishing community in Jacksonville is HUGE!!!!!  Almost every launch on the weekends is packed with yakkers and there's quite a tournement presence in the area as well. 

Paddle tails on 1/4oz jigheads, zara spook topwaters, redfish magic spinners, and soft jerkbaits rigged weedless are all staples in the area.  For live bait most folks use shrimp or mud minnows on a fish finder rig or under a popping cork.
