Topic: Fast seafood and veggie deep fry batter  (Read 1202 times)

While at Albion this year, I stumbled on a fast and, very tasty batter for frying fish and other fish and veggies.  It consists simply of Krusteaz Buttermilk Pancake Mix for Water,


And beer.  Substitute the water for beer adding enough to make the thickness a consistency that will coat the fish with a heavy layer.  Use hot oil, I prefer peanut oil because it doesn't smoke below 450*, at 350*. 

For even more crunch to the batter, take Ritz crackers and crumble a few, then roll the battered fish in the crumbs.  The Ritz crackers add a buttery flavor to the fish.

That looks good, I'll have to try that - In a pinch, the most simple batter I have used is:

2 cups flour
1 bottle beer (Negra Modelo is great for this)
1/4 t salt

combine, blend, fry - enjoy!
