I'm on a low fat diet, so I usually saute the fish with a minimum amount of oil/butter mix, and a light flour/cornmeal breading.  For a quick and lazy sauce, I take a supermarket taco mix, at 1tbsp flour and about 1/3 cup of water, and cook until it is just starting to thicken.  Spoon about a tablespoon over each taco.
