Took awhile to get off my duff and try, but I used our Cuisinart chopper to grind up a chopped up abalone for burgers. Mixed in some Contadina bread crumbs, chopped onions and garlic, pepper, lime juice. Did not have any tomatoes as per a recipe. Whipped up some avocado and salsa mix, whole wheat bread toasted, butter lettuce and ketchup. Fried in the skillet with only a little of canola oil. I swear it was excellent! Ron

Ron,

I make almost the same type of ab burgers. When I slice up an ab for frying I usually cut the abalone into a rectangular block so that the slices are uniformed. The odd shaped parts that are left over is what I throw into the food processor for the patties.

They are also a good substitute for a sausage patty with some eggs over medium for breakfast.  :smt001

Here is my opinion.  Abalone is a delicacy and those that go diving risk their life.    Few ever get to taste the mild succulence of the meat.  I think it is a disaster to put anything on the abalone that alters its taste.  I think the cook that puts egg, batter, hot spices and other additives should be flogged.  No, not just flogged,  skinned and flogged.  I think it is like people who state they love eating sushi.  But only order rolls.  Or better yet, order sashimi and drown the fish in soy sauce.  You can't taste the fish.  Abalone has such a unique mild flavor, it should stand alone.  If you must put abalone in a hamburger, egg it or in batter, give me a call and I will trade you a pound of hamburger or fish.  Other than that, :smt005 I don't have strong feelings about preparing abalone.  :smt005
