This one goes great a lot of things and only calls for 4 ingrediants:

3-4 medium red potatoes scrubed and cubed (skin still on) to 1/2-1" pieces
1 tablespoon kosher salt
1-2 tablespoon EVOO
enough fresh sage leaves to cover a cast iron pan , washed & patted dry with stems pinched off

Pre heat your oven to 425 degrees.
In a cast iron pan large enough to hold all the cubed potatoes in a single layer add the EVOO, and spread it around till it covers the pan well.

next layer the sage leaves all over the pan, try to leave as few bare spots as possible.

Next cover the leaves withthe salt evenly, it may seem like a lot but trust me.

Now add the potatoes and try to push them into the salt as best as possible.

Bake in the oven for 35 or so until the potatoes turn a nice golden brown.  (Caution wear a glove, the handle is going to be 425 degrees, don't ask me how I know).  Now I like to use a spatula to go around and make sure nothing sticks, but if done right you can place a plate on top of the pan and flip it over and it comes out perfect.

The sage will form to, and stick to the potatoes. it goes great with tons of stuff.  I wish I had pic ot share but they never last that long.  Enjoy

PS: Why do I say wear a glove?  I used a pot holder once and it didn't cover enough of the handle and I was using my large cast iron pan for a big batch, and the handle nailed a small patch of exposed skin.  Hurt like a MF!
