Polygamist Al's girlfriend Judith made this dish from her childhood in Columbia. I made it with lemon instead of orange and it was fantastic both ways. Makes the house smell like a seafood restaurant. I loved this preparation.

1-2 pounds of fillets
2 tablespoons butter
1-2 cloves chopped garlic
1 whole sliced orange or lemon
Salt and pepper to taste
2-3 tablespoons chopped cilantro

Sauté garlic in butter. Season fillets and lightly brown on one side. Flip fish
And squeeze a little citrus juice and add sliced orange or lemon and cilantro. Cover and remove from heat. Fillets will be done by the time you get your plate ready. Smells like your cooking shrimp or crab. Simple and delicious.
So I'm packing my bags for the Misty Mountains, where the spirits go...........
