Just heard about this on an outdoor podcast ( http://www.kfbk.com/cc-common/podcast/single_page.html?podcast=BobSimmsshow ) and thought it was worthy
of passing on.

Campfire Blueberry Muffin Recipe

Take an orange and cut one third off the top. Scoop out the insides.
Save the insides for a latter snack.

Fill half full with blueberry muffin mix prepared as normal.

Put the top back on and wrap in two layers of aluminum foil.

Place in the coals of your campfire but not in a flaming fire. Just
pull some coals away from the main fire.

Turn every 3-4 min. for 12-15min. total. Take one out to check and if
not done re-wrap and put back for a few more minutes.

When done, take the top off and add butter.

Man, does that sound good or what! He also mentioned you could test it
in your home oven but he didn't mention heat or time. If any of you
try it, let me know how it works out. Enjoy!

Kristal said she used to pull this number when she was in girl scouts.  We tried it once while camping.  It didn't turn out so great, but probably b/c I'm an impatient SOB who didn't leave it in the coals long enough or turn it for even coooking.  Orange rind even hollowed out, has a TON of water, which suppresses the internal temp pretty good.  So you really must let this beotch cook, but left unattended could really overbake one side.

Reading about this brings major nostalgia ... I think I'm going to take it for a spin this weekend!   :smt003

Good luck guys and please let us know how it works out for you and any tweaks/tips to improve it. I still need to give it try myself.

One thing I heard was to use extra foil to create a "handle" to make it easier to turn and pick up. Good luck.
