Pic #1 couple mallards

Pic #2 cut up in small pieces removing skin and fat

pic#3 Ingredients

Pic#4 put in high tech food processor  :smt002

Pic #5 place in baggie, remove as much air as possible, then in refer overnight

Place on racks in Little Chief smoker and give one load of cherry or apple (no hickory or mesquite...makes it burpy) and let go for about 15 hours until dry but not brittle

Pic #6 is what was left by the time we got it in the house....delicious!

This is basically the same recipe we use for salmon, beef, etc.

Watch-out !!  those smoked duck farts make anthrax feel like a warm bath.
