Fed the troops at the firehouse tonight, and the wsb was great! Many happy faces at the table.

I served the fish over jasmine rice which was cooked with a little coconut milk and some shredded coconut.

The sauce is sweet, but a couple habaneros made it more interesting. Careful though, a guy could go too far.

Haven't done much smoking, but I didn't really like hickory, too potent.  Try cherry, its my favorite now!

What ive tried and probably be the only way I will ever cook it is cut into nice size cutlets, egg, batter with A combo of buttermilk bisquit mix and italian bread crumbes, heat grill pan nice and hot and drop into some clarified butter ( GHEE ) brown both sides and you win! It has been the best fish I have ever had! Thanks to the guys who has giffted me some! I love you guys!!! :smt006... Jonsez,Alain,and Rey Lapulapu!

WSB TO DIE FOR..  Split the fellit long ways and open like a sandwich.  Put fresh basil leaves, olive oil, salt and pepper, close the sandwich.  Wrap in prociutto and dribble olive oil on top, salt and pepper.  Cook in hot pan for 30 seconds a side, get the prociutto crispy.  Put fish with pan in oven 300 degrees 10 minutes. Lay fish over a bed of garlic mash potatoes.

Had 4 guest over to enjoy and all said best fish ever.  I had to agree....

All of the above sound great, and I've got a frig freezer of samples to try.  My wife says I can't go fishing again until I whittle it down - but I think I'll take a page from TallPaul and promise her I'll stop by the firehouse around the corner on my way home - or maybe I'll just stand outside and yell "WSB!!" "WSB!!" and see how fast they turn out!

So far, I've been grilling and pan searing and have not been disappointed. I have steaks and fillets. The fillets I will use for poke, sashimi, ceviche, and breading/frying. Can't wait.
