here's fuzz preparing some speard white sea bass poke :smt007 (camping trip at DL Bliss , lake Tahoe)
Yup... that was some good stuff and the very first time I had WSB poki.

My Poki recipe is very simple:
-cubed fish (fresh YT, tuna, albacore are my favoritie)
-sesame oil
-chopped green onions
-Hawaiian sea salt
-dried chili flakes

For authenticity, I add ogo seaweed and sesame seeds too.  For variety, I might add a little soy sauce or grated ginger.

I love poke!  Never made my own though.  Definitely going to have to try these recipes later this summer after I get some albies.  How do you guys think ocean caught chinook would work for poke?
Why are coho smolts so tasty?

Should be great.  I plan to try it with salmon if I ever get some.

I made it with albacore last summer...AWESOME!
Are there any other fish you can safely make it with? Maybe something that we catch around here more frequently? Rockfish, lings, halibut?
May the fish be mighty and the seas be meek...
