1 Get Fish.  (fishing prefered :smt001 but any store bought salmon works good for smoking)

2 Smoke fish with alder wood  (I like a bit of cajun spices rubbed in)

3 Cool to room temp.  Chop in to 1" squares and throw in the food processor.

4  Mix in 12 oz cream cheese per 1 lb of smoked fish.

5. Spread mixture over a sheet of foil and roll it up real tight into a 18-20" log.

6. Spread sliced almonds evenly onto a baking pan or dish and tost in the oven until golden brown.

7. Roll your log around in a seperate dish untill you have most of it covered .  Crumble a few almonds in your hand and roll in for all the  uncovered areas.

8. Let cool in freezer for about 30 minutes.  Cut into 6-8" sections, then place the fridge.

9.(Allow to freeze completly if you plan to vacum seal and send home to parents)  

10.  Enjoy with crackers or spread on tosted breads.

11. Enjoy.
