Since I suck at fishing lately......lately, yea right........I bought some steelhead on sale to put in the smoker.
The previous two weeks I bought some salmon, turned out great. White ruffy after that, turned out excellent.
Not only didn't I take into consideration the HOT weather this time around I also did a double smoke (fill the pot twice with wood chips)
It turned out soooooo dry. I was throughly disappointed.
What can I do to salvage this??
Smoked fish dip.
I put all the fish in a bowl and chopped it up until it was real fine.
Added some cream cheese, sour cream, a little worchershire sauce, lemon juice, sweet relish, and a little milk for moisture.
Get whatever crackers I desire.
Turned out awesome.
A great way to salvage an otherwise shameful dish.

Nice going on the table fare rescue, Tote. Good thinking on the recipe conversion. I have two smokers that I've only used a handful of times and definitely have yet to master. I wonder if your recipe would work well for other types of fish. I've heard of and tried smoked salmon dip but I wonder how smoked rock cod dip would taste. It sounds funny, but might have to try it as a back-up plan on some over smoked fish sometime

Yea, I've screwed up some batches of smoked fish and pretty did much the same thing. Another idea is to treat it like a tuna sandwitch, a little mayo, mustard and whatever else you like and you have a great sandwitch.

I found some trout in my freezer that was probably 2 years old.  I smoked it (actually oversmoked it), chopped it up and made smoked trout / jalapeno dip out of it.  Oh boy!!
