That's why the fish they serve in sushi restuarants have all been frozen to kill off whatever parasites it may have. Also, notice that all of the worms the guy pulled out were in the blood red area. These portions are always trimmed off while dressing the meat, which further reduces the chances of parasites being consumed. However, I don't think they can be totally removed all the time.

I have not found parasites in the yellowtail we get in Bajia de Los Angeles in the sea of Cortez

You’d want it to be true but it’s not.

Some establishments serve fish caught that same day raw.

I’ve actually seen it done a couple of times on a very popular Food Network program.

I was kind of shocked as well.

I’ve done it several times myself but lately have second guessed it.
Pronounced in Spanish  ka·be·za de mar·t·yo
