This recipe is ridiculously easy and super tasty.  Since it is so simple, it is best with sushi grade fresh fish, since there isn't any cover-up going on.  

Start with a nice fillet.  Generously cover both sides with Paul Prudhomme's Seafood Magic.  Carmelize sliced onion in a saute pan and reserve.  In same pan (hot), add fillets.  Sear and then cook for 2-5 minutes. Turn fish and repeat until fish begins to flake.  Remove immediately, be careful not to overcook.  Put on dish and top with carmelized onion.  White wine reduction optional.

Serve with rice, salad and bold red (wine with catchy fish name adds to the experience).

This is fast, low-fat, and SUPER tasty.  The seasoning has kick, and you single guys (Mooch, JD et al.) might want to know that according to Leah "chicks dig it"!
