Has anyone ever smoked kokanee?  I love tha taste of the fish fresh, but I caught more than I can eat in one sitting, so I think I will try to smoke the extras.  I will try a hickory chip smoke this time, but I would like to hear from anyone who has had success with a different method.

I use apple and cherry chip combo.  In my brine I also put whole cloves and all spice berrys to add more flavor.

Love kokes smoked.
Love it. I lik the natural flavor of the fish . I go with a basic brine, not to strong! Water, salt, soy sauce, little brown sugar, pepper.

Smoked with Alder Chips!

Amazing feast! You can taste all those natural oils in the fish.

I would also try to get some pear and apercot wood.  sorry for my spelling this evening  :smt010.  they are also nice.
The more the merrier.

I and my dog need a fishing trip rery soon.

Any kind of fruit or nut wood will do.  I recommend brining, and don't overdo the smoke.

This is my favorite. The best.

I too love the natural flavor. Basic brine. Not too strong, and i too love alder wood. Great for kokes.
