Just picked up A stainless electric water smoker. Never used this kind before.How many of you have mastered the skills? Wanna know if any of you can give me some trade secrets. I picked up the Meco model 5029P....And on another note I was wondering how rockcod comes out in A smoker...Andy

I've been smoking Monterey Bay rock fish for more than 30 years and they are very tasty. The key is the ingredients of the brine you make up, and the type of wood chips you use.

I had a couple buddies that had the same smoker you just bought, one had a good experience with it, the other had nothing but problems with the heating elements and heating controls. Now these were older units, so i would think that the manufacturer took care of those issues.

Boy, I thought you would just weld something up if you wanted a smoker Andy :smt044   Check out the forums on http://www.thesmokering.com and there is a ton of stuff on smoking, brines, rub's, etc there.  I'd love a chance to smoke something with ya bro!  :smt028

My bro's got a huge wood BBQ last yr I smoked a bunch of blues, assorted RF...alder chips it was very very good...brine um in white wine, soy, brown sugar, garlic salt, pepper...some of them diced up some hot peppers from my dads garden... the HOT ones...along with sweet hot sauce in the Asian isle at most stores forget the brand but its great on anything....and it rocked....
