Howdy fantini4fish,
Stillwater(Carmel) offers something in all of its areas.  You don't necessarily need to paddle far.  There are Kelp rockfish immediately in front of the launch, lings and cabezon at the first rocks and halibut on a straight line out towards point lobos.
But, if you want to try some different spots, there are lots of options.
Today, we were at one of the pinnacles off Sunset Point and the black(blue?) rockfish were in a frenzy......splashing all about in large schools.  My largest ling last year came from this area.  We got a nice assortment of various colored rockfish and a cabezon out there today.
See you there.
