On the tails of making Aquachile Negro with some WSB, we scored some local rod & reel caught bluefin from our CSF.  We decided to go back to the roots of Aquachile Negro with a traditional Aquachile.  As usual, I looked to Hank Shaw's Hunter Angler Gardener Cook site for some inspiration, but found I was happy enough with his recipe I'd just go with it as is.  The only change I'd make is to season with salt at the end, which we did after our first bite.

We plated it as individual pieces each getting its own share of the accoutrement making for easier nomming.

I may have to try something like that. I like that the fish does not sit long in the marinade. My wife loves avocados.

The limited time in the liquor really keeps the flavor of the fish intact and allows the liquor and accoutrement to compliment it rather than dominate it.  The cucumber  brings a nice freshness to it, too.
