Today the chef spirits landed upon me. I was thinking crab cakes but using cooked smelt. It was ludicrous, so I decided to do it.
 
I had a few frozen smelt that I baked on 425F for 9 min, and I scooped the meat out of them carefully, making sure the bones and scales stay behind.
Then I grated potato and carrot, and mixed it with thinly sliced green onion, regular onion, cabbage, mini bell pepper, and cilantro. Added salt and old bay for seasoning. 3 eggs and olive oil to bind it together. Then shaped small patties with a measuring cup, and threw them on the griddle on 350F for 7-8 min.
Absolutely phenomenal. Goes well with cervesa.

I can dig it - looks tasty!  Sounds like it would be a great recipe for small extra bits of fish left when cleaning/filleting.

Yes! After filleting fish, scrape the bones with a spoon, and that meat would be perfect for this recipe.
