  When asking around how to make Fish taco sauce, the answer is like asking for driving directions

 Someone told me that Chef's recipe is on this board, but I can not find it....

 I heard it's the best, and I'm not surprised.........

Here it is...

8 oz jar of mayonaise
1 red onion
1 bunch of fresh cilantro
1 or 2 fresh limes
white vinegar to taste

Dice the red onions and finely chop the cilantro taking care to use only the leaves.  Mix into the mayonaise, then add the juice of the limes and splash in some vinegar until the sauce reaches a syrupy consistency.  Making the sauce ahead of time will allow the flavors to meld.

I use a very similiar sauce...w/o the vinegar and plus some sour cream to the sauce(about equal parts to the mayo) plus a jalapeno. Now if I can...just catch a fish so I can make the fish taco sauce...

Here's a really easy one

About half a cup sour cream & 1 tablespoon powdered taco seasoning.  Make sure you make it early since it gets better if it sits for at least an hour.  Then I top the tacos with cilantro & onion

My last couple of times rockfishing, I gave "fish taco kits" to a few close friends and co-workers.  Kits contained some of Chef's Sauce, some shredded cabbage, some fish fillets, and the recipe / instructions for frying ala ChuckE and the recipe for the sauce for future use.  Needless to say, it met with rave reviews all the way around... Chef's sauce is da' bomb.  The man definitely left his mark in more ways than one.

Mooch, thanks for the link to the Chef thread. What a great tribute to an incredible fisherman and friend as evidenced by all of the contributors. Thanks for sharing his recipe and the memories.
