Was planning to go for a water therapy session this weekend but bad weather spoils my plan.  So decided to bake a fresh loaf of bread to go with smoked Halibut instead  :smt001

Oh wow, that sourdough looks tasty!

Smoked trout came out pretty good for a first batch. I remember helping my dad smoke steelhead when I was a kid, and more or less followed his recipe. I think next time I'm gonna let it brine a little longer or use a little more salt. Using a charcoal smoker takes a little extra attention too. I kept it between 150 and 160 for about 4 hours, pulled the fish off at 145 temp. I might go a little hotter for a shorter time next time - it was a little dry. Overall, not a bad first batch though, and will make some yummy snacks for sure!
