The only extra thing I bring is the drive for the Adventure Hobie and the times I've forgotten the drive it paddles  fairly effectively. It is stable in the water but I have no lawn chair seat, just the one it came with that has half an inch of elevation. Center of gravity is all important on narrow kayaks.

For fishing, I will vote for a pedal kayak since you have more space and more flexibility for your fishing setup. For example, you can easily install a downrigger system on hobie/old town for salmon fishing.
