After cleaning, the fish were liberally salted in a large mixing bowl. Placed the fish in ziploc overnight in fridge.
Removed from fridge. Rinsed and pat dry. Placed fish to be eaten in a dish uncovered back in fridge to dry age. Decided to try some after 3 days.
Mini-George Foreman grill for maybe 5-7 min. till lightly browned and crispy skin.
Eaten fresh hot off the grill with rice... sooo good :smt006
No issues for me if eating the pin bones when thoroughly cooked. The George Foreman seems to compress sear the flesh and easy clean up with a wet paper towel.
