Safety First / Gordo Banks Divers left stranded at sea
« on: July 18, 2012, 01:28:45 AM »
An Eagle Divers boat left divers stranded out at Gordo Banks a few days ago. Gordo Banks is located off the coast of San Jose del Cabo, Mexico. According to reports the group made it to shore safely after a 14 hour swim.

I first heard about this incident from a scuba instructor a couple of days ago. The rumor was confirmed yesterday by a captain friend of mine. I tried Googling it a couple of times and this is the only information I was able to retrieve.

General Talk / HAPPY BROTHERS DAY NCKA!!!!
« on: June 30, 2012, 05:18:09 PM »
A few years ago my 5 year old son Lucas decided to create a new Holiday. This new Holiday would be celebrated on the first Saturday after Fathers Day and would be called "Brothers Day". This years Brothers Day was delayed one week because Lucas now 7 had a birthday party that he was invited to and didn't want to miss it  :smt003.

Therefore today we are celebrating Brothers Day. Together my family will play games, BBQ and have a pool party. I have now included my two brothers by calling them and telling them that I love them  :smt075

So I was just posting to wish all my NCKA brothers a HAPPY BROTHERS DAY!!! If you get a moment reach out to your siblings and let them know how much they mean to you too :smt008

Recipes / Surf Smelt Fries a la Cabeza de Martillo

Surf Smelt Fries a la Cabeza de Martillo

30 count beheaded, gutted and tails removed surf smelt.

1-2 tablespoons Martillo Mix (recipe below)

1 cup Progresso Italian Bread crumbs

Canola oil

2 limes

Kosher salt

Martillo Mix

½ tablespoon salt
½ tablespoon cayenne
½ tablespoon paprika
3 tablespoon Lawry’s
2 tablespoon Onion powder
2 tablespoon Garlic powder

Martillo Sauce

3/4 cup ketchup
3 dashes tobasco sauce
2 dashes Worcestershire
1 tbsp dijon mustard
1 clove of pressed garlic
11/2 tbsp of fresh lime juice
1 tspn Martillo Mix

Combine ingredients and chill in refrigerator cover for at least one hour.

Rise surf smelt and pat dry with paper towels. Put them in a resealable gallon size plastic bag. Add the Martillo mix and gently massage the rub into the cervices of the fish. Place in fridge for at least 1 to 2 hours. Remove from fridge and slowly add bread crumbs to the bag of fish making sure to evenly coat each one.

Fire up the skillet and add the canola oil. Fry each smelt a couple minutes per each side until a dark crust is formed on the fish. Only fry about one third of the fish at a time so that you don’t over crowd the pan or lower the oil temp. Once fully cooked remove and set on paper towels to absorb excess oil. While still hot squeeze some fresh lime juice over them and lightly sprinkle them with kosher salt.

Serve with a side of Martillo sauce or your favorite cocktail sauce and some cold beer.  :beer2

Recipes / Mussel Fritters a la Cabeza de Martillo
« on: June 25, 2012, 12:43:44 PM »

Mussel Fritters a la Cabeza de Martillo

Steaming the Mussels

1 tablespoon Olive Oil

1/8 chopped onion

6 cloves garlic chopped

¼ chopped Serrano chile

Fresh thyme 2 tblspns.

½ bottle of chardonnay

Fresh cracked black pepper

Kosher salt

1 tomato chopped

Approximately 4 lbs California Mussels. Yielding about 12 oz of cooked
Mussel meat.

In steamer pot add the olive oil and chopped onion.
Cook for 3 mins. Then add the garlic and Serrano chile and sauté for additional 2 mins. Add the thyme, black pepper and salt and stir. Add the wine and chopped tomato and bring to boil.

Add the clean mussels in the steamer basket and cook until mussels open
15-20 mins.

Let cool and remove the meat and de-beard each mussel. Chop into teaspoon size portions and set aside.

Fritter Batter:
1 tablespoon butter
¼ cup  red bell pepper diced
1/4 cup finely chopped onion
1 teaspoon minced jalapeno
2 cloves garlic, minced
1 tablespoon minced Italian parsley
1 cup all-purpose flour
 1/2 cup cornmeal
2 teaspoons kosher salt, divided
1 teaspoon freshly cracked black pepper
1/2 teaspoon baking powder
3/4 cup room temperature beer, such as pale ale
2 egg yolks
1/2 to 1 cup reserved mussel broth
1 1/2 cups canola oil
Limes

Directions for the fritter batter:

In a medium sauté pan over medium-high heat, add the butter and, when melted, add the red bell pepper, onions, and jalapenos. Sauté for 3 to 4 minutes, and then add the garlic and 1 tablespoon of the parsley and cook for 1 minute more. Remove to a plate to cool.
In a large bowl, add the flour, cornmeal, 1 teaspoon salt, pepper, and baking powder. Mix well. Make a well in the center and add the beer and the egg yolks, and fold together with a rubber spatula until well combined. Add in the cooled vegetable mixture, the chopped mussels, and 1/2 cup to 1 cup of the reserved, strained cooking broth. You are looking for the consistency of pancake batter.
In a large skillet over high heat, add the canola oil and when hot (200 degrees F) add the fritter batter in large spoonful amounts, careful not to crowd in the pan. Be cautious, these pop sometimes, splattering hot oil. Cook for 4 to 5 minutes, gently turn over and cook for an additional 3 to 4 minutes. Remove to a paper towel-lined plate, sprinkle with reserved salt and a squeeze of lime and repeat. Serve alongside some limes, cocktail sauce or aoli of your liking.
Enjoy with a cold beer and great friends.
 :beer3

IMPORTANT PLEASE READ: Mussels are currently under quarantine. Check the quarantine hotline at 1-800-553-4133 before harvesting any mussels in our waters. The mussels used in this particular recipe were harvested while in season, then steamed and vacuum sealed for future consumption.

Recipes / Fried abs a la Cabeza de Martillo
« on: June 12, 2012, 10:37:45 AM »

Fried abs a la Cabeza de Martillo

1 lb pounded abalone cut length wise to resemble a bacon slice.
1-1/2 cups Progresso Italian bread crumbs.
Martillo Mix or Escense
1-egg
½ cup milk
1 lime
1-2 cups vegetable / Canola oil
Kosher salt as required

Martillo Mix

3 parts Lowry’s seasoning
2 parts Garlic powder
2 parts Onion powder
½ part Paprika
½ part Cayenne powder
½ part Kosher salt

Martillo Sauce

3/4 cup ketchup
3 dashes tobasco sauce
2 dashes Worcestershire
1 tbsp dijon mustard
1 clove of pressed garlic
11/2 tbsp of fresh lime juice
1 tspn Martillo Mix

Combine ingredients and chill in refrigerator cover for at least one hour.

Preparing the abalone.

Sprinkle Martillo mix over abalone making sure to lightly dust both sides. Place in refrigerator covered for about 20 minutes.

In a bowl add the egg and milk and beat until properly mixed together. Add 1 teaspoon of Martillo mix and stir. This will be referred to as your egg wash.

In a separate bowl pour in the Italian bread crumbs and season with 1 teaspoon of Martillo mix.

Remove chilled ab slices from refrigerator and follow the steps one piece at a time.

Step 1. Place a slice in the egg wash and make sure that it is evenly coated.

Step 2. Shake off excess wash and then transfer to the bread crumbs and make sure both side are evenly coated.

Step 3. Place the breaded ab slice on a cookie sheet.

Important step: When all pieces are breaded and laying flat on the cookie sheet place them in the refrigerator for at least one hour. This will allow the breadcrumbs to adhere to the abs during cooking. This also works well when breading fish too. You can do this hours in advance as well.

Fry them up in very hot vegetable or canola oil for a few minutes on each side. Transfer them onto paper towels to remove any excess oil.

Serve hot with lime wedges, Martillo sauce and a bucket of ice cold beers.

Come and get it!

Recipes / Abalone Ceviche a la Cabeza de Martillo
« on: May 31, 2012, 04:54:01 PM »
Abalone Ceviche a la Cabeza de Martillo

1 lb abalone sliced to approximately 1/2”x 1”x 1/8” pieces. It’s easier to slice if you place
the abalone in the freezer so that it is partially hardened before slicing.
1 tbsp extra virgin olive oil
2 tbsp fresh minced cilantro
1 tsp fresh minced oregano
1 minced Serrano chile
1/3 cup thinly sliced green onion
1 medium ripe mango pitted, peeled and diced to ½” cubes.
½ cup seeded and diced roman tomato
1/3 cup fresh squeezed lime juice
¼ teaspoon kosher salt
¼ teaspoon fresh cracked black pepper
1 diced avocado in ½” cubes

Place sliced abalone in a glass bowl and gently toss with olive oil and the next three ingredients cover and place in refrigerator for about 2 hours.

In a separate glass bowl add the green onions and the next three ingredients. Gently toss and place in the refrigerator for the same amount of time.

After the time has elapsed combine ingredients and gently fold in the avocado.
Add salt and pepper to taste and serve with some authentic corn tortilla chips and an ice cold beer.

Enjoy,

Antonio

Ocean Kayaks / Adjustable foot braces
« on: April 27, 2012, 11:34:07 PM »
Looking to buy either a new Prowler Trident 15 or a Trident 15.

It looks like the main differences is that the Trident 15 has adjustable foot braces and a mod pod.

I can easily substitute the rod pod on the Prowler Trident 15 with a mod pod. But I wanted to know if the adjustable foot braces really made a big difference or not.

Never used them so don't know what I'm missing.

Your input is appreciated

So I went to West Marine on Tuesday to check out a few items that are on the top of my list. A VHF hand held, compass and bilge pump.

They had about 10 different hand helds on display and I wanted to know if anyone could share their personal opinion pro or con to the following radios:

ICOM M24

ICOM M72

Standard Horizon HX-851

And yes I did do a search on VHF and it did come up with a lot of information and reviews. Some old and some new I just wanted to see if anyone either used these particular models or if there was some fancy new one out on the market that is getting rave reviews.

As always thanks for reading my post.

I need to take classes so that I feel safe and confident on the ocean. Weather permitting I’m planning on going to Monterey this coming Sunday the 22nd of April and taking the “Basic Skills for Sit on Top Kayaks” held by MBK.

If weather is a factor for this Sunday I will be rescheduling for the next Sunday where weather is not a factor.

The class is from 9AM to 5PM with a one hour break between 1-2PM.  It is a combo class with “Intro to Sea Kayaking” and the “Surf Zone” taught back to back at a reduced price of $110.00.  NCKA members are also given an additional 10 percent discount for this class.

There is a minimum group number of 2 kayakers required for this class and counting me there is a total of 1 kayakers so far for this coming Sunday.

So I wanted to see if anyone would be interested in going out to MBK this Sunday and possibly learning a thing or two that may someday save your life or come in extremely handy.

The information for each of the classes mentioned is below along with a link to MBK. Once again it is the combo class “Basic Skills for Sit on Top Kayaks” that
I will be taking.

Please let me know if you are interested in joining me for a beautiful day OTW.

Hello,

Can anyone recommend a sporting goods store that specializes in kayaks and kayaking gear preferably in the South Bay. I am also open to surrounding areas
as well but the closer to San Jose the better.

Thanks for the information

My maiden voyage was at Shelter Cove about 10 years ago. I still remember it vividly like it was yesterday. I paddled out alone a couple hundred yards from shore on my new SOT OK Scupper Pro. It was a typical brisk and beautiful SC morning. I remember the tranquility and the sounds of the ocean. I remember looking back towards land and seeing the vultures soaring high along side the cliff above the ramp. A small pod of dolphins swam close by almost as to say hello. Then on my way back a sea lion popped out of the water about fifteen feet away with a 2-1/2’ leopard shark in his mouth. He then proceeded to do a death roll on the surface before disappearing. It was truly a memorable maiden voyage.

I have since started a family and now have two beautiful boys.
Unfortunately, my kayak has been collecting dust in the garage since that day and we have both grown back are hymen. I have finally decided to pursue this passion but with more caution. I have been doing my due diligence in order to educate my self with right from wrong. I have found this site to be extremely welcoming and valuable with tons of information.

So I'm reaching out to the NCKA brotherhood to see if anyone would like to accompany me on my second so to speak maiden voyage. I am located in San Jose and am open to location.

I would like to add that I'm a SCUBA diver, ab diver and an avid fisherman. Therefore I'm very comfortable in and around the water.

I would like to thank everyone that I have been corresponding with thus far and for those reading this post.
