Looks like more than 2 inches from the pictures. Not many that size
I know that 1.75" is a 15 footer, 2+ inches equals Holy Crap

I got a dexter after this tread and like it.

the other fish processing tool I would highly recommend is a good set of shears.  I have some Milwaukee heavy duty construction scissors that have migrated from the tool shelf to the kitchen, and they are awesome for cutting the breast bone of fish I'm going to cook whole while gutting, for cutting off the collars on bigger fish, etc.

Good shears are important. Like to take some whole fish home to cook Chinese style or just plain tired of getting stuck by Rockfish spines ? Trim those fin spines off If you are putting the fish in a bag to take home to clean or cook or just to keep separate from your fishing partner's fish. Makes cleanup a lot easier if fish spines haven't poked a dozen holes in the bag

Love those Monster Blacks at the Cove. No sub-limit this year where you are releasing 18 inchers cause you know you'd limit on 20+ inchers.

Metal sellers like Allen Steel in Redwood City will sell you lengths of steel, Stainless or non-stainless, and then cut it into whatever sizes you want.  Don't go too thick or its really hard to grind down the tip.
I bend to hook shape in a vise. Bend or tap it to shape. Bend slightly, then loosen and, slide forward and bend again. Continue this until you create your desired size and shape.
I cut the bamboo near a joint and drill into the interior  with a bit that matches hook diameter. Drill toward one edge so  the shaft is along the interior wall and when you gaff a fish the interior wall  supports the shaft.
I put expanding gorilla glue into the  hole and insert the hook shaft. you can also drill a smaller hole down the bamboo, along the hook shaft length to insert more glue. you can also put a screw in there to help hold the shaft.
I then wrap 80 to 150# braid on the top of the bamboo and a bit onto the hook shaft. Apply epoxy and wrap again
Paracord can be wrapped on the bamboo for decorative or gripping purposes.
If you are in the Fremont area, I have bamboo I'll donate, if you want to make a couple gaffs

Mendocino coast !! Most of us have to drive 2-3 hours to get to the quality fishing you have. Definitely have your VHF radio attached to your PFD. No need for a vest over that. A decent fishing PFD will have enough pockets for your gear. Definitely leash your paddle. Deciding on leashing or putting floats on rods etc is a personal choice. A section of pool noodle on a net is a good choice.   You have an older model kayak, but they caught all sorts of fish before things got fancy. Two fish clips on about five feet of line. Keep your average fish on one and big Lings /Halibut etc on the other. Bleeding - not bleeding etc is a choice and there are arguments for both.  Just toss the fishy clips into your rear well.  Splash water on the fish occasionally and maybe have a burlap bag to toss over the fish to keep them wet and cool. Paddling with fish on a clip in the water is a bitch. But, if you are going with a drift, having them float beside the boat is fine. The possibility of Seals or Sharks is there, but remote. Its a judgement call among many judgement calls.  The most important thing is to have the proper safety gear and to find dependable fishing buddies who can back you up if things go south.

Or a custom rod and weapons rack (14 exterior rod slots and 10 interior cut circles for more rods, etc and rod tubes)
And -  an Amazon bought carousel for the trout rods. Screwed down PVC pipe end caps on the carousel to keep rods in place. 28 rods and room to grow.

For a kayak all you really need is a couple 8"-10" plastic boxes the size of your side storage pockets or pouches and a small container of weights if you are ocean fishing. Anything else can fit into the pockets of your PFD

I put an eyelet in the front upper corner of the footwell .Use kayak specific pop rivets on the eyelets. Not the ones you can get a Home Depot or Harbor Freight. Use a good quality Caribiner https://www.amazon.com/gp/product/B07PNGMF41/ref=ppx_yo_dt_b_asin_title_o05_s00?ie=UTF8&psc=1  and a line that won't corrode or rot. I use sailing line from West Marine.
Depending on the year it was made either stick the fins under the seat and a pedal in the drivewell or strap it upfront over the hatch
