Salmon for lunch today was extraordinary. Here’s the recipe

Liquid Smoked Salmon


Combine in a Ziplock bag:
* 2 teaspoons sugar
* 2 teaspoons liquid smoke
* 3 teaspoons fish sauce
* 3 tablespoons soy sauce
* 1 teaspoon kosher salt
Mix. Add 1-2lb salmon filet (no skin preferably). Marinate overnight. Flip bag to let other side marinate for 3 hours. Put fish on top rack. Start oven at 350 for 12 minutes. If color is not golden brown, add 5 more minutes at 400. Don’t overcook.
