Oh yeah that's the stuff, I prefer it skin on and grilled/burnt so it's a little bitter topped with daikon and shoyu. This is also great with sardines and other oily bait fish, good for the fishery and good for you!

Wife verdict…drumroll…victory!  I called her to tell her to eat that fish.  Before I could tell her she said, “I ate your fish.  It was yummy.”  She thought it was halibut.  That’s a good sign.  I’ll make an Asian out of her some way… :smt006

Way more delicate and the flavor is a touch richer if that makes sense.  Not fishier but it has depth.  We all know halibut is everyone's favorite cuz it tastes hardly fishy.  An example of my wife's palette would be preference to salmon poke or  lomi lomi style.  When it gets cooked, other than blackened, she will have some but not be clamoring for seconds... :smt006

As for Halibut: It tastes mostly like whichever flavor you sauce it with!  :smt005 I’m not baggin or raggin on it. I love it, too.

you can cut out the bloodline even with the skin on, just make two angular cuts where the blood line is and pull it off. I made ceviche with the first time a few weeks ago and its da bomb.

you can cut out the bloodline even with the skin on, just make two angular cuts where the blood line is and pull it off. I made ceviche with the first time a few weeks ago and its da bomb.

Looks good!

Similar to what I did, I filleted them cut out the pin bones.  Marinated in soy, sesame oil and broiled on high flesh side up.  Ate with coconut rice and veggies.  Very good.

I was trying to target them at HMB but it was really sporadic where I'd find them.  Wasn't able to find large schools just passing fish.

I'd love to be able to catch a boat load of them and smoke/can them.

I need to familiarize myself with the little delicacies. There are so many opportunities here in the Monterey bay that i often pass up. 

I wouldn't even have thought of Ceviche. Yum !
