Safety First / ACR ResQLink + PLB

So I do paddle solo on the ocean from time to time in remote areas and have been carrying an ACR AquaFix 406 EPIRB (center) for the last 5 years. Luckily have never had to use it. After 5 years you have to replace the batteries and found out it would be $250 to have the new battery installed so I bought an ACR ResQlink+ (2881) PLB (left) instead for the same price. About half the size and weight of my EPIRB and it has a built in strobe and it floats. Smaller than an Iphone 5 (right) as far as length and width but much thicker (1 ½”). Probably use it for hiking and skiing also.

PLB's are commonly used by sea kayakers in Australia and New Zealand and I believe they they are required on all vessels more than 2 miles offshore. In the U.S., they are less commonly used by kayakers. Now that they have come down in cost and size, hopefully more kayakers will use them. Although I had never fished with Dave, I was impressed with Dave’s courage and integrity and decided to build him a rod. Finally met him at Crab Fest earlier this year and he picked out the colors for his rod. The original plan was to finish it for the rockfish opener, but work, chrome obsession and the death of some close friends set my rod building back. I did end up fishing with Dave at Bodega and he schooled me.  :smt005

I chose an MHX L905 blank which is excellent for fishing swim baits D.C. style or bottom bouncing. Light weight but plenty of backbone. Match it with a Lexa or Revo and you have a real ling or hali slayer. Well the rod is done and worthy of the Battman.

Personally, if I post a hook up, I don't care who reads it. I am suspicious that the crab thieves may be using our hookup threads to time when to raid our pots. Will give some examples tonight. So what do others think?

Favorite Lure Gift Exchange
Bring your favorite lure ($5-10) wrapped so you can't see what it is. It should be new or in very good condition. It should be something you have caught many big fish on. No gag gifts (example, banana peels, used condoms). We will run it white elephant style so when your number comes up you can choose an unopened gift or take a gift from someone else.

How to Play the Game
1. The rules can vary but the most basic directions are below.

2. Everyone brings an inexpensive gift to the party.

3. All gifts should be wrapped with no outside markings. You shouldn't know who the gifts are from, what they are or who they are for.

6. Number 1 goes first, picks and unwraps a gift.

8. The next person's turn occurs after a wrapped gift is open.

9. The game ends when all gifts are unwrapped.Rules

2. A gift can not be immediately stolen back by the person it was stolen from.

Recipes / Singapore Pepper Crabs

Pepper crab is the other popular crab dish in Singapore. Because the dish is largely oyster sauce and pepper, get the good stuff. I serve this as a first course with Hainanese chicken rice as the second course for an all Singapore meal.

Singapore Black Pepper Crabs
Adapted from Steven Ng, Shangri-La Hotel

Ingredients (serves 2-4)
2 Large Dungeness Crabs, cooked and cleaned. Cut each body section in half and remove the legs. Using the back of a heavy knife, crack the shell of each leg joint (without breaking them into pieces)
6 Tbsp Butter
6 Cloves Garlic, chopped
2 shallots, chopped
2 Tbsp Coarsely Ground Tellicherry Black Peppercorns
½ tsp Freshly Ground White Pepper
4 tsp Chinese rice wine
Sauce:
1/4 cup oyster sauce (Lee Kum Kee brand)
2 tsp light soy sauce
2 tsp dark soy sauce
2 1/2 tsp sugar or to taste
1 ¼ cup water
1 tbsp cornstarch mixed in ¼ cup water
Garnish
1 green onion, sliced
2 red Thai chili or red jalapeno peppers, thinly sliced
2 Tbsp cilantro, chopped


Directions
Dry fry the black peppercorn on a low heat until fragrant, and set aside.

Melt the butter, and mix in the shallots and garlic and stir fry for 1-2 minutes. Add crab, stir fry over medium high heat for 1-2 minutes; add black pepper and white pepper, de-glaze with Chinese rice wine.

Add water, oyster sauce, both soy sauces and sugar. Lower heat, cover with lid and let braise over moderate heat for 3-4 minutes. Adjust seasonings, thicken with cornstarch, transfer to plate. Topped with garnish, serve immediately.

Safety First / Pincer Injuries from Crabs

Had a bad pincer injury to my thumb yesterday and by this morning had an infection with an abscess which I drained. Guess those crab pincers are pretty dirty as far as bacteria. I cleaned it on the water with hand disinfectant but it still got infected. Anybody use gloves that they would recommend?

Recipes / Singapore Chili Crab

This dish is no ka oi. One of Karen's favorite dishes. Use Thai chilis if you can find them.

Singapore Chili Crab

Ingredients: (Serves 2-4)
2 Dungeness Crab, cooked, cleaned and cracked
3 Tablespoons peanut oil
8 cloves garlic, roughly chopped
1 shallot, roughly chopped
8-10 fresh red Thai chili or red jalapeno roughly chopped
1 egg
2 green onions, cut into finger length
1 lime, juiced
1 small bunch cilantro, chopped
Sauce:
1 cup warm water
5 Tablespoons tomato catsup
3 Tablespoons sugar
1 ½ teaspoon cornstarch
1 teaspoon brown bean sauce or dark miso
¼ teaspoon salt

Directions:
Mix together the sauce ingredients and set aside.

Heat the oil in a wok or shallow saucepan over high heat.  Add garlic and shallot stir-fry for 1 minute.  Add the chili, stir-fry till fragrant, about 1 minute. Add the crab and stir fry for 1-2 minutes. Add the sauce and bring to a boil turning the crab so all of the pieces are coated. Turn the heat down to medium low, cover and simmer 2-3 minutes. Break egg into the wok and stir with a fork until cooked, about 1 minute. Squeeze the lime juice and stir in scallions.  Transfer to a plate and garnish with cilantro. Note: You can make this dish with raw crab which is cracked and cleaned. The stir-fry step would be longer, until the shells are red and the simmer stage 5-10 minutes.
