Albion 2013 was the first attempt at making this. I thought it was pretty tasty and crispy. I know of some improvements I have to make especially with cooking time and heat variations. I definitely want to do this one again.

I know a few of you tried it, what did you think?

Mojo/marinade: 2 servings 1 pound cut

3 heads garlic
2 teaspoons salt
1 teaspoon black peppercorns
1 1/2 cups sour orange juice
(In a pinch, use two parts orange to one part lemon and one part lime)
1 cup minced onion
2 teaspoons oregano
1 cup Spanish olive oil

The mojo with oil marinade is best for chicken, duck, fish, and so on. The oil prevents the meat from losing fat and moisture.
Mash garlic, salt, and peppercorns into a paste, using a mortar and pestle. Stir in sour orange juice, onion, and oregano.

Grilling Time:

I had the whole belly 13 pounds slit just up to the skin but not all the way through. I let it soak up the marinade in a big zip-lock bag for one week prior leading up to Albion.
Grilled it on open flame for 2 hours meat side down and 30 minutes skin side down. Very easy to get distracted and let it burn when you have awesome friends around offering you delicious brews and conversations.

Chicharrón Colombiano- Colombian-Style Fried Pork Belly

Even though I'm not Colombian this is the same way my mom cooked it in the Philippines and when we moved to the states. Never changed, always delicious. Boiling it in water to tenderize and render in its own fat will give you a very tender inside and an insanely crispy outside. This is the way she still does it and so do I.

Very simple preperation:

1 ˝ pounds pork belly with meat, washed and cut into 4 pieces
1 teaspoon baking soda
˝ teaspoon sea salt
2 cups water


Place the pork belly pieces, skin side down on a work surface and then make 1 ˝ inch crosswise cuts on each piece, being careful not to cut through the skin.
Rub the pork belly strips with baking soda and place in a medium saucepan. Add the water and salt. Cook over medium-low heat until the water evaporates.
When all the water is evaporated increase the heat to medium and cook the chicharrones for about 15 to 20 minutes or until they are golden and crispy.

Up for sale is my Inno Awning that I've used twice first time at Gimme Shelter 2013 and Albion 2013. I know a few of you have seen it in person at the events.

Awning retails for $299.

I'm selling it for $180 has all stakes and ropes included.

Letting this one go because I will be receiving the next generation Awning from the company. Awning is a Universal fit. It works with all vehicles with Factory and Aftermarket crossbars. In my opinion it works a whole lot better on higher profile vehicles such as vans, SUV's, RV's, and trucks. They do work on cars but you won't be able to stand up.

The very Big Dexter Cleaver that looks tiny in Big Jims hand is the one thats missing. Please re-unite me with my beloved blade.


Lost: Dexter Cleaver brown wooden handle and very heavy.

I was using it to carve up the pig that Rey Lapu Lapu bought for PIF. It probably got mixed in with everyone's utensils.

If anyone has it or finds it please let me know. It was a birthday gift and I love that thing.

I've been gone for awhile off the water and off the boards. I was shocked to see all the fully decked out AI's on NCKA. It's pretty awesome.

I'd like one but realistically out of my price range.

Have any of you AI guys been out trolling Albacore yet???

After a 2.5 year absence from any kind of fishing & diving I am making a comeback to the sport I truly love and miss. I put kayak fishing on the back burner for my other love cycling. Cycling will still be something I do everyday. I hope to mix it up with kayak fishing on the weekends now that I have a normal work schedule with weekends off. I hope to make a full fishing comeback by the start of 2013.

I am in the market for a used Hobie Adventure or Revo. I will keep an eye open on the NCKA boards and Craigslist for any deals. If any of my old fishing buddies from back in the days are thinking off loading any of their old Hobies please email me. I promise to put it to good use and kill fish.

Looking forward to seeing all my old NCKA buddies back on the water. Also looking forward to meeting/fishing along side all the new NCKA'ers.

Any of you brothers ever fished that area before??? Any advice is helpful since I will be totally new to that area.

I've only spent time in the Baja area of Mexico and I know that place like the back of my hand. Heard this place is like a whole different world compared to Baja.

I am heading down there October 27th and staying till Nov 5th. I will be bring along my inshore rods, fly fishing gear, tackle, & camping gear. Flying into Cancun renting a Jeep and heading down the coast. Can't wait to getting into some bone & permit fishing in the salt flats/mangrove areas in Sian Ka'an.
