Modify as needed for the thinner fillets. Basically less time in the brine and less time in the box. Enjoy! Stampede looks like it’s kicking butt right now

so for the small kokes (~11") are folks generally smoking them whole? or filleted?
planning to smoke up a bunch, chilling in the fridge now

I pretty much do the first one. Half sugar half salt. Usually a little heavier on the sugar than the salt. Brine overnight. Smoker at 160. The small Kokanee finish fast. I always fillet mine for smoking.

I have a recipe out of one of my bbq books for Salmon. I think if your doing fillets it'd work just the same. I'll bring it over and you can take a look at it.
