Halibut in bowl, salt and pepper, lightly dusted with flour, shake off excess to leave light film of flour. Heat oil first, saute in cast iron 3 minutes on one side 2 on the other, medium heat, 1/4 cup avocado oil with Tbls Bacon grease. Set aside
New sauce pan, medium heat, saute 3 tbls onion until slightly caramalized in olive oil, add 2 diced plums(in season), saute 2-3 more minutes, 2 Tbls mirin to deglaze, 1 cup chicken stock, medium high heat, and reduce 3-4 minutes, too much will make it too salty, turn off heat, add 1/8 tsp cayenne, 1 tbls rice vinegar, squeeze lil lemon, handful of fresh basil, 3tbls butter. taste for salt, serve on side so kids dont freak and ladle over hailbut with pasta.
