It just takes out the need for a dipping sauce since the olive oil/vinegar/chili pepper mix is enough.

Today's the day, canner is venting now.  I went with 12oz. textured jelly jars for my wife's use in the offseason plus they're tall like a herring.  You need an inch clearance at the lid.

I seasoned 7 jars before adding herring.  Scrubbed out the bloodline and brine for 1 hour in TBS salt and a quart of water.

Trying to remember my quantities...
All jars scored one bay leaf, for my attempt for retaining meat integrity by a tannin release theory though this idea is for mushy pickles, an 1/8 tsp salt, 2-3 peppercorns and 1 TBS. Olive oil except the plain herring has 2 TBS.

1.  1 TBS.  Lousiana Hot sauce, 1/8tsp paprika
2.  1 tsp.  french's mustard, 1/4 tsp dill
3.  2 jars, fresh blended tomato, 2 TBS. 1tsp paprika, 1/8 tsp sugar
4.  2 jars, 1 TBS. Shoyu, 1 TBS lemon, !/8 tsp sugar
5.  2 TBS olive oil, 1/8 tsp salt, peppercorn, bayleaf.

10 lbs.pressure for 100 minutes.

Hmmmm, not sure how they’re gonna taste.  They’re still bubbling.  I’m hoping it’s not too fishy or salty.  The blogs said not to pack em’ but I know I coulda fit more per jar or used a smaller jar. Prolly pop one in a couple weeks.  Gonna leave em out in a cool dark place…

Stoked!  Stopped at Andersen Valley Brewery today after an event.  This brewery serves no food but lets you bring your own in.  I didn't have a sandwich or anything.  I brought two canned herring to this event but didn't get a chance to eat them so I grabbed em' out da coolah' and offered a tasting to the six guys at our table and they both were a success in flavor and consistency.  Mustard dill and Tomato Paprika. Not too fishy or salty and the bones completely chewable.   Gonna write the technique on paper before I forget it. Spicy, plain olive oil, and shoyu lemon to go...stay tuned...The beer I enjoyed was Salted Caramel Porter 9.6 and they're having a fire sale on Old Fashioned 8.3 brewed in Bourbon barrels, 5.99 for a 4pack...tasty, goes great with da herring... :smt006

Ate a can of the herring I smoked last year and it stood the test.  Dumped it on some rice.  Tasty and as good as I can imagine.  I say this because today I’m going can some dungeones for the first time.  There’s plenty of resource on the inter webs.  My wife does not care for hot crab as you may know by now and frozen picked meat is lacking in my opinion.  We’ll see if this juicy canned product keeps and maintains texture and flavor.  Stay tuned.  It may be a new thread.
