Can someone let me know what kind of Ray this is?  Couple people said they taste like scallops but I don’t know the regulations for rays and I couldn’t ID.  This one swam away.

Looks like a baby Stingray. The wing section has a texture like Scallop if you cook it properly.

never prepared it, but in Greece I had a "boiled ray salad" recommended by the chef. The meat was shredded similar to crab and had a oil based dressing and it was frikkin delicious.
that example in the pic looks pretty small to me though. More like a cornish game ray.

Kinda looks like a skate. Not a great pic for id. Not worth the attempt at that size tho. Heres one I did a few years back. I wont do it again. :smt005

Yeah took a big skate like 35 years ago. Didn't like it gave it all to my older brother who loved it. I'm sure it's all in the preparation.

Ate it once at Emeril Lagasse's, Emeril's Fish House at the MGM in Vegas. Paid big bucks for some skate there a few years ago  :smt044

"What do skate wings taste like?
Skate fish have a mildly pronounced flavor, firm flesh and a high collagen content which gives it a unique texture when cooked. The flesh is light beige to pinkish in color but becomes off-white when cooked. Their taste is similar to scallops. Do not over cook Skate or Ray as the flesh will break along the separations."
