...make hickory-smoked pepper hot sauce, pickled jalapeños/Fresno's, and blistered Padrons.

Mmm...

I didn't really follow any "recipes", but I'd be glad to share some tips if anyone is interested.

This hot sauce is unreal... So good...

What kinds did you grow?

This year I did jalapeños, Fresno chilis, and Padrons. Last year I also did some habaneros and a couple different jalapeño varieties.

The smoked pepper hot sauce had home grown (and smoked) tomatoes, jalapeños, Fresno chilis, and padrons (plus some garlic from the store... didn't plant any this year for some dumb reason).

Those look awesome! We planted a couple of pepper plants maybe 2 months ago and they're finally starting to bud, these are good ideas for what's hopefully to come.  :smt003

What was your recipe for your salsa?
My "recipe" was kinda like this:

1) Smoke lots of hot peppers, a bit of garlic, and some tomatoes for about an hour at around 250 degrees or so (I used hickory). (Don't have exact ratios, but it was maybe 75-80% peppers, 20% tomatoes, plus a healthy amount of garlic).

2) Chop off the stems, and chop into smaller chunks. (No exact science there...)

3) Put all that goodness into a stock pot, and add enough white vinegar to cover it.

4) Bring to a boil and boil/simmer for 10-20 minutes or so. (BEWARE: Your house will fill up with some serious peppery tear gas... I liked the smell, but it also made my eyes water... a lot.)

5) Let it cool until it's safe to work with.

6) Scoop it into a blender using a slotted spoon.

7) Blend it up.

8) Add back some of the peppery vinegar from the stock pot to get your desired consistency.

9) Salt to taste.

That's about it!
