My wife has been getting on me about frying so we tried some oven "fried" rockfish.  I had previously done it with halibut, but never with rockfish.  Our "new" oven has a "convection bake" feature, so we decided to try it.  It was such a hit that we have switched over from frying. 

1. Take your rockfish filets and cube them into 1-1.5 inch cubes, make sure the fish is dry (pat it with a paper towel before cubing),
2. dip in melted butter, let the excess drip off
3. roll in Italian bread crumbs or crumbs of your choice
4.put it on a cookie sheet on foil (easy clean up)
5. Convection Bake at 450 for about 10 minutes, watch it so it doesn't burn
6. Enjoy,  Also tastes great with a little dipping sauce if you like

Sound delicious!
I'll give it a try using panko crumbs.  I still have rockfish in the freezer and a convection oven that's not getting much use.

Sacyak's Thai Spicy Peanut sounds like and ideal coating or dip.  :thumbsup:
