After having kept a largish trout from Del Valle I'm trying to figure out a good way to cook it...usually when I catch 'em they're cooked on-site (at the lake) by just wrapping them in foil with some green onions, salt and a bit of pepper...or a little italian dressing when it's available.  Now I'm looking for something different.

Is there anything different about cooking a typical 1 - 2 lbs trout vs. cooking a largish 5 - 7 lbs trout?

Fillet it out and cross cut it into individual sized pieces then use the Chardonnay Trout recipe I just posted. I had it last night and it was great. Glad you had luck yesterday.

I got a few.

1. Get 4 to 5 thick sliced bacon.  Fried that up slowly in a skillet.  Take out the bacon and half the trout (with skin on-season with pepper, garlic salt) and put into the bacon grease.  Fry each side until golden brown.  Check the center and if you need to cook it some more I just put it in the microwave for 15-20 sec.  Don't forget to eat the bacon.

2. Chop up some carrot, onion, and potato.  Make the potato and carrot tiny.  They take a long time to cook. Stuff the veggies in the body calvitiy .  Add pepper & garlic salt. Add a few cubes of butter. Used Aluminium foil and wrap trout.  Cook for 20 to 30 mins at 350 deg.

3.  Use number #2.  But steam the trout and add melted butter at the end. Lay the trout on top of the veggies.

And being "Ornamental" we put soy sauce on everything.
