This recipe is killer...Always comes out great!

I'm going to leave the proportions up to you...just trust your instincts

Cook up a pot of rice, and warm up a can of black beans (frijoles negros)
Saute an onion , and find yourself an ovenworthy casserole.

Place the rice in, with the beans spooned on top, and lay on the onions.

Then take your rockfish fillets, and cook them in a frying pan in some olive oil, along with a couple cloves of minced garlic. Use a little salt and pepper, and squeeze a bit of lemon juice over the fish.You want a very hot pan, and cook the fillets quickly to brown both sides, but remove them before they are completely done.

Now drape the fillets over the rice and beans, and sprinkle some Feta cheese over the whole thing. Add a bit of diced tomato.

Now finish cooking in the broiler, just long enough to completely cook the fish, and get the Feta melting. Don't overcook it...

Finally, top with some sliced avocado, and spoon some fresh salsa over the dish...very colorful!

Serve with a good Mexican beer....Bohemia is a great choice.

Thanks for this recipe, I made it this evening for the wife and I.  She isn't a "plate cleaner", but just as I was finished devouring my dinner, I looked over and saw her picking the last bits of rice off her plate!!!
