Andy, add a drip pan to the center, and move your coals to offset and try that next time. I find I can get the crispyness without it drying out.   You can also use the ring by itself to make the 22" deeper for those larger cuts of meat for smoking. I block off the skewer shaft holes with foil and do it that way. Another trick is to either pick up a Hover grate or use an 18" grate with some nuts and bolts to add a second shelf when you are doing those extra racks of ribs, pulled pork, smoking fish.
