Hello, went out to the bay and caught a few nice halibut this week. Curious if anyone has any good recipes for them, kinda wanted to try something new. Thanks

Cool thanks. Forgot to attach the pics, I got my limit and my buddy got one. We lost a couple of decent fish during the day too. The biggest went 14lbs and the others were all between 5&6.

It was a non yak trip.

Put the fillet on a piece of parchment paper and cover with some fresh sliced veggies (whatever you have)  and salt and pepper. Cover it all with olive oil then fold it up into a nice little package. Bake the whole thing for awhile. But don’t bake it too long!

Cast iron medium-medium high heat, avocado oil, bacon fat, butter, s&p, marinate in bag with fresh yellow onion, green onion, lil fresh garlic. Touch olive oil, 30 minutes minimum marinate, watch that timer depending on filet thickness, oil in pan should be about 1/8-1/4" high and hot, place filets in and dump onions also into pan.  Do not touch for 3-4 minutes for carmalization.  Light sprinkle of flour on top before flipping. Does not have to be perfect. Flip and watch that timer...maybe 3 more minutes, onions wil blacken and  some will be different levels of yummy.  Flour creates tidbits of crusty happiness.  Remove everything from pan and plate, finish with touch of apple cider vinegar, lemon, or soy sauce, and/or another pad of butter depending on your flavor mood.  At least this is my basic all around fish recipe and options for marinate are spontaneous and sparing i.e. fish sauce, chili oil, different powders , white pepper, sugar, Asian cooking wines...most of all watch that heat, and keep an eye on the minutes.  When I'm doubtful in doneness, I take a fork and gently pull filet apart and when it separates flakey style I turn off the heat and get it out of there.  TMI, I know....enjoy :smt006

More marinade items.  Koji(umami stuff), apricot jam, ginger, curry powder, chili powder, paprika, liquid smoke sparingly...I'm having many halibut cooking dreams when I haven't caught my share this year.  I must be hungry. :smt006

You def can't beat the baking in foil/parchment methods. Also excellent by dipping in egg, coating with seasoned panko breadcrumbs, and then pan frying.

Whatever it is, just dont overcook the critter.

rub a few pieces with salt, pepper, brown sugar, (or whatever you like) and put in a refrigerated baking dish overnight. Pour off the juice,  and Alder smoke the pieces for about 2-3 hours, then finish them off in the oven.
this gives the halibut a very sturdy texture, but it isn't dry if you don't over smoke it.

I pair this with something like roasted root veggies or baked potato for a fall-feel dish.

Tried cooking halibut with 7-up the other day and it turned out great! Think they call this Poor Man's Lobster?

This, although I usually just do salted boiling water then drop cubes and pull once they start to float...serve with the drawn butter it tastes like lobster to me!

I also like a pistachio crusted fillet skillet cooked with a good Olive Oil and hit with a Tbs of butter at the end. Served with wild rice or mashed taters with steamed veggies.

I think it makes a great fish and chips. I dredge fillets in seasoned flour and do a simple beer batter. whip up a tartar sauce and you’re in business.

Floured, egg washed, and dredged in crushed tortilla chips, then pan fried can be killer with any number of accompaniments

Toss cubes into a stir fry with some shrimp. Cook it hot and fast and eat immediately

Possibilities are endless, I Love Halibut

Huh, never heard of poor man's lobster. I'm gunna try that tomorrow for sure, thanks for the recipes guys.
