Im in the market for a decent fillet knife that is flimsy, not too expensive but works pretty good. There are way too many options out there from $7 on up. So I'm gonna try and simplify it and see what suggestions you all have. My budget is $35-$40. I'm sure there are decent ones out there for that price range.

i use the dexter straight fillet knife with plastic white handle.  so far its my favorite.   ive never tried any of the more expensive ones.   i see some people use the super curved knives,  but i don't know that technique.

Bob's suggestion is good, they have them for <$20 at Costco Commercial warehouses.  There is a similar commercial knife at Smart & Final for a similarly shockingly low price.

I use 2:  The small one is a Moraknife bait knife ($15) off of Amazon -- it's my boat knife and I LOVE it because it covers 95% of my needs.  The long fillet knife is an old Japanese commercial fillet knife I got from a bait shop on a wharf somewhere along the coast many years ago, and it was pretty inexpensive, but is a truly fine knife.  Both have great belt clippable plastic scabbards.

Victorinox Cutlery 8-Inch Curved Breaking Knife, Black Fibrox Handle https://www.amazon.com/dp/B0019WXEO2/ref=cm_sw_r_cp_api_5vUsAbFAJSJJ0

Use this knife to break down all my fish and a generic dexter knife to deskin the fillets

Dexter and Victorinox both seem to offer great value. I've been using the flexible Victorinox 6" (https://www.amazon.com/Victorinox-Swiss-Fibrox-Boning-Flexible/dp/B000QCNJ3C) as well as a rigid Dexter. Curious to hear what others like.
Wanted to buy: Stealth ProFisha 575 or 525

I have a bubba blade,for the price it's stupid sharp.i had the 9"flex tip then bought a 12"
My biggest worry is that my wife(when I'm dead)will sell my fishing gear for what I said I paid for it

Dont get me wrong, I am not trying to be cheap on a fillet knife. I have some nice pocket knives. However, seems to me that a decent fillet knife shouldnt cost much.

And you admit to that?  In public?  those things used to be stupid cheap until the two-legged bubbas started buying them, then they got stupid expensive.

I use two, a Victorinox 6" stiff boning knife to break down the fish (https://www.amazon.com/Victorinox-Boning-Curved-Granton-Fibrox/dp/B000IXHGG0/ref=sr_1_17?s=kitchen&ie=UTF8&qid=1514889181&sr=1-17&refinements=p_89%3AVictorinox) and a flexible boning knife to skin and (duh) remove bones (https://www.amazon.com/Victorinox-Boning-Curved-Flexible-Fibrox/dp/B005JHIAQA/ref=sr_1_23?s=kitchen&ie=UTF8&qid=1514889181&sr=1-23&refinements=p_89%3AVictorinox).  That stiff blade makes short work of rockfish.

I didn't care for the curved blades at first but now I like the way they work more than straight blades.

A friend swears by these Kershaw knives for tuna and salmon: https://www.amazon.com/Kershaw-Stainless-Corrosion-Resistant-Glass-Filled/dp/B00I0RWO6S/ref=sr_1_3?ie=UTF8&qid=1514889801&sr=8-3&keywords=fillet+knives&refinements=p_89%3AKershaw

But I also have an old Rapala filet knife that I like a lot for fish with softer skin.

I have quite a few fillet knives.  I have found that I prefer knives with a pretty curved edge, because a long section of the curved edge slices through meat as I slide the blade along the ribs of a fish.  With a straight bladed fillet knife, I feel like I am dragging the tip of the blade through the meat along the ribs.  My favorite fillet knife is a Mustad knife which is available for $9.96 from Walmart.  https://www.walmart.com/ip/KVD-Mustad-7-Fillet-Knife-with-Sheath/23704235
