For Trade / FREE: Salted herring/sardine for fish sauce

I have 4 one-gallon jars of salted fish - mostly herring and sardine - that I intended to make into garum, but I have a lifetime supply of the stuff now and would rather give it to someone who wants to try their hand at filtering their own. These have been aging for about 18 months and are ready to filter.

Anyone interested? I'll walk you through how to do it.

I would like to get the jars back, though, FYI. The bottles in the pic are not available, just there to show what the final product looks like.

General Fishing Tips / Freezing bait: tray or no tray?

I've pre-frozen my brined herring so as not to crush them in the vacuuming process.
But now I'm finding air pockets around the fish in when I seal them in the trays.

I sealed a few without any tray and air pockets were fewer.

What do others do? Are air pockets more or less okay?

I've been buying a couple generic brands of freezer bags the last few years, but I've gotten to wondering if I run the risk of buying something with BPAs or PFAS.
Should I stick with Food Saver brand? Any types of plastic bags to avoid?

General Talk / Severe rust damage on my Subaru Outback

I just discovered this today. When I opened the rear trunk of my Outback, I heard some weird grinding noise and upon inspection, I found lots of heavy rust and corrosion around where the door shuts. And the support arm that holds the back door open on the right side has caved in where it bolts to the car. Hard to explain but the pics should show clarify.

I don't know what's caused this. I suppose little drops of saltwater over time, but typically the kayaks are fairly dry when I load them up.
Has anyone seen anything like this? What might have caused it? Any ideas on how to fix it? It's structural damage so I'm afraid it could be fairly expensive.

Recipes / Wet brine for smoked salmon...is this normal?

So I'm trying a recipe for smoked salmon that a friend passed on to me. It's a wet brine, which I've never tried before.
The recipe calls for 36 hours in the brine. I'm at 12 hours and the pieces of fish are not very firm yet, a little I suppose but not much.

With a dry brine - just salt and brown sugar - the fish is very firm after an overnight soak.

So is this normal? I suppose the longer brining timine - 36 hours - is part of the equation?
How firm should I expect wet-brined salmon to be after 24 or 36 hours?

Any tips would be great. I'm just hoping I'm not bungling this!

Recipes / What size salmon for smoking?

Is there an optimal size when it comes to smoking salmon? I know smaller fish can dry out and I've heard the fillets from bigger salmon can be too thick. I have yet to smoke any salmon this year but planning on it if/when I get more. Thoughts?

Gearing Up and Rigging Up / An ink that won't rub off the kayak?

I like to put 20" and 22" marks on the side of the kayak so that small fish never leave the water to get measured.
The trouble is that the black Sharpie ink always rubs off. Is there something more permanent someone could recommend?

Okay, I think it's time to get a flag mounted on the kayak.
The Railblaza Visibility Kit looks nice but is a bit pricey, and actually has mixed reviews.
Any recommendations?
