Avocado and Tomatillo Salsa (the perfect compliment to Molbasser's fish tacos and tortilla chips)

1)   Tomatillos - #8-10 husks removed
2)   Garlic Cloves - #5 peeled
3)   Jalapeno Pepper - #1 stem removed (#2-3 if you like salsa very hot)
4)   Onion - #1 peeled and roughly chopped
5)   Water - 2 cups
6)   White Vinegar - 2 Tbl.
7)   Avocado (ripe) - #2 peeled and seeded
8)   Cilantro - #2 bunches chopped
9)   Limes - #2 juice
10)   Salt - 2 tsp.
11)   Pepper - 1 tsp.

Combine the tomatillos, garlic, jalapeno, onion, water and vinegar in a saucepan. Bring to boil, then simmer for 30 minutes (open all windows of your house for this step) :smt013. Allow to cool. Transfer ingredients with 1 cup of the liquid  to a blender. Add avocado, cilantro, lime juice, salt and pepper. Blend for about 30 seconds or until just smooth. Do not overblend. If the sauce is too thick, add additional liquid. Adjust salt and pepper to taste. Makes 5 cups.
