Title: Lingcod Presentation: POINTS SCORED WITH WIFE

My wife recently had a significant surgery (benign tumor taken out of her salivary gland) and a few weeks later, she can finally eat real food again - so I decided to score some points by making a tasty meal, pretty.

LINGCOD:
Heat butter, garlic and onion in a pan then add lincod. Flip once.

GRILLED JUVENILE ONION (what's the official name for these type of onion?):
Cut in half, add olive oil to cut side with salt and paprika. Wrap in tinfoil, add to grill for 4 minutes covered. Unwrap from tinfoil, place on hottest area of grill to quickly char.

Spanish rice mix, local greens and mango salsa came from our farmers market.

To form the rice, press into small, lightly greased small container then flip onto plate.

Garnish plate with onion tops.

Score points with wife.  :smt007

Looks good I always use a measuring cup to mold the rice like that. I do all the cooking at home, the plate is a empty canvas just waiting to or painted. Did you pair it with a glass of?

Good Question! My wife only seldom drinks white - so I paired with with a glass of Straffe Hendrik Belgian Quad Ale. If you haven't had it... please hunt it down. Somewhat hard to find but it's currently my favorite beer on the entire planet... and I've had a lot of them =P

I caught my first Ling and initially fried a small steak in butter.  It came out pretty good.  More lean than I thought it would be.  Then, I got some fancy smancy recipe from the net that utilizes parmesan cheese.  That recipe was not so good.   I have very little experience cooking fresh fish but I'm discovering a short fry in butter is all it takes to bring out the flavor and sweetness and still maintain the moistness, assuming you don't over cook.

Legit!!! I haven't done beer batter in a while. Looks tasty.
