Yeah, in the beginning stages of "the madness" it usually proves beneficial to go with the keep it simple approach.
for kayak rigging/fishing gear a  milk crate with a couple of PVC tubes zip tied to it, a bit of tackle, one rod/reel, and a net are about all you'll need, initially.
Personal safety stuff (PFD, suitable clothing, radio, flares, what-have-you) would be my priority. Fishfinders and other goodies were last on my list.
